Roast Pork And 'kraut

- 5-6 pound lean Pork Shoulder roast. shopping list
- 8 or so cups of Kraut, your favorite shopping list
- 11/2 cups of apple sauce shopping list
- 1 medium red onion shopping list
- 1/4 cup dark brown sugar shopping list
- water (as needed) shopping list
- salt shopping list
- fresh ground black pepper shopping list
- garlic powder shopping list
- onion powder shopping list
How to make it
- Preheat oven to 375 degrees f.
- Season entire roast with salt, pepper, garlic powder, onion powder to your liking. (don't be stingy with the salt and pepper, it's a good sized piece of meat).
- Place the roast in a good sized roasting pan, put in about a 1/2-1 cup of water. you can also do a 50/50 mix of water and apple juice.
- Cover roaster tightly and place in pre-heated oven for 11/2 hours.
- While the roast is cooking, rinse your kraut and put it in a bowl
- Chop up the onion to your liking and add to kraut.
- Add the applesauce and brown sugar to the bowl and mix well. You can even add a little salt and pepper, I do.
- After the 11/2 hour mark remove roast from oven and lower heat to 325 degrees f.
- If need or pan is dry, add a 1/4 or so cup of water or apple juice so there is just enough to cover pan bottom.
- Surround roast with the kraut mix.
- Tightly cover the pan again and put back in 325 oven for another hour.
- After the hour the roast should be fall off of the bone tender and the kraut should be almost browning a bit. (If not, re cover pan and shove back in the oven for a bit)
- Uncover pan and place back in oven for 30 minutes or so to give everything a bit of color watching carefully that your kraut doesn't burn.
- That's it, that's all there is! I don't carve the roast but rather take 2 forks and pull it into chunks. Serve it with peas and carrots and some nice garlic mashed 'taters!
