Super Mexican Chicken Marinade Recipe
Similar to the marinade used in Chipotle restaurant. Can be made ahead.

Ingredients
  • 2 oz ancho and/or chipotle chiles
  • 1 tsp black pepper
  • 2 tsp cumin powder
  • 2 TBS chopped fresh oregano
  • 6 cloves garlic
  • 1 red onion, quartered
  • 1/4 cup vegetable oil

Directions
  1. If using dried chiles, soak overnight.
  2. Remove seeds from chiles. (Unless you like it spicy!)
  3. Add all ingredients to food processor and blend until smooth, adding more oil if needed.
  4. Coat four small chicken breasts for at least one hour, up to 24 hours.
  5. Double recipe to coat small whole chicken (inside and out), and put on the rotisserie.
  6. I have experimented with other chiles, such as jalapenos, and other spices, such as hungarian paprika. Just use whatever you like/whatever can be found in your area.
