How to make it

  • Mix together rhubarb and sugar in a large bowl, let sit for 1 hour. Drain off the excess liquid but do not squeeze or pat the rhubarb dry. (skip this part if using frozen rhubarb)
  • Pre-heat oven to 400f degrees. Place the pie shell on a foil lined baking sheet.
  • Add flour, cinnamon, nutmeg and sliced strawberries to the rhubarb mixture and stir to combine. Place fruit mixture in the pie shell. (**If using frozen sliced rhubarb, thaw it first in a colander until tender but still cold. Again, do not squeeze or pat dry--Mix with flour, 1 cup sugar, spices and strawberries and bake immediately after thawing, so have the crumb topping ready)
  • Place butter, flour, brown sugar, oats, cinnamon and salt into a bowl and cut together with a pastry blender or with your hands until all combined and looks like small pebbles.
  • Place it on top of the pie, pressing in lightly so it sticks and stays in place.
  • Place the oven rack one position lower from the center and add the sheet pan with the pie.
  • Bake for 15 minutes at 400f, then lower heat to 350f and bake for 45 minutes longer.
  • Remove pie and let cool to room temperature before slicing.
