Strawberry-Rhubarb Crumb Pie

- 1 Deep Dish ready-made pie crust (frozen, thaw according to pkg directions) shopping list
- 4 cups of sliced fresh rhubarb (I often freeze my garden rhubarb and use frozen slices, just thaw prior to baking--see directions) shopping list
- 2 cups of sliced strawberries shopping list
- 1-1/4 cups sugar shopping list
- 1 tsp. vanilla shopping list
- 1/3 cup flour shopping list
- 1/4 tsp. cinnamon shopping list
- pinch of nutmeg shopping list
- Oat topping: shopping list
- 1/4 cup cold butter, cut into cubes shopping list
- 1/3 cup flour shopping list
- 1/3 cup brown sugar shopping list
- 1/3 cup large flaked oats shopping list
- 1/4 tsp. cinnamon shopping list
- pinch of salt shopping list
- *You could use a standard crust and lower the fruit to a total of 4 heaping cups, sugar to 3/4-1 cup and flour to 1/4 cup. Bake time may take 15 minutes less as well. shopping list
How to make it
- Mix together rhubarb and sugar in a large bowl, let sit for 1 hour. Drain off the excess liquid but do not squeeze or pat the rhubarb dry. (skip this part if using frozen rhubarb)
- Pre-heat oven to 400f degrees. Place the pie shell on a foil lined baking sheet.
- Add flour, cinnamon, nutmeg and sliced strawberries to the rhubarb mixture and stir to combine. Place fruit mixture in the pie shell. (**If using frozen sliced rhubarb, thaw it first in a colander until tender but still cold. Again, do not squeeze or pat dry--Mix with flour, 1 cup sugar, spices and strawberries and bake immediately after thawing, so have the crumb topping ready)
- Place butter, flour, brown sugar, oats, cinnamon and salt into a bowl and cut together with a pastry blender or with your hands until all combined and looks like small pebbles.
- Place it on top of the pie, pressing in lightly so it sticks and stays in place.
- Place the oven rack one position lower from the center and add the sheet pan with the pie.
- Bake for 15 minutes at 400f, then lower heat to 350f and bake for 45 minutes longer.
- Remove pie and let cool to room temperature before slicing.
