Salmon Cakes II

- 12 oz salmon shopping list
- 3 green onions, finely chopped shopping list
- 2 tbs A.P. flour shopping list
- 1 egg shopping list
- 1 cup mashed potatoes shopping list
- 1/4 tsp pepper shopping list
- 1 tbs oil shopping list
- oil for frying shopping list
- Small amount of flour, second amount. shopping list
How to make it
- Heat one tbs of oil in frying pan.
- Add salmon and cook, breaking up pieces as you go
- When almost done add the green onion and cook for another few minutes.
- Remove from pan, drain excess oil and allow to cool completely.
- Place salmon mixture in a bowl and add the potato, egg, pepper and flour.
- Form into 6 patties, if mixture is too hard to handle place in fridge for 10-20 minutes.
- Place patties on a plate and place in fridge for one hour.
- Heat enough oil to cover the bottom of a frying pan. I used a combo of coconut and avocado.
- With a fine wire strainer, sprinkle a small amount of flour on the top of each patty.
- Place floured side of patty in the oil and sprinkle the other side with flour.
- Cook on med. heat, 5 minutes per side.
- *The uncooked patties are fragile so handle carefully.

Made these for supper last night. I made one change and that was using gluten free flour.Easy to make and very flavorful, i also used a mixture of coconut oil and avocado oil. Nice and crispy on the outside and tender inside. Served them with cabbag...more
