CRISPY SCALLOPS WITH CHIPOTLE TARTAR SAUCE Recipe
Combines sweet scallops with spicy smokey chiles

Ingredients
  • Mix
  • 1/2 cup tartar sauce,
  • 2 tbs chopped scallions,
  • 1 tbs orange juice, and
  • 1 1/2 tsp chipotle hot pepper sauce in a bowl.
  • Let stand.
  • Pat 1 pound sea scallops dry between layers of paper towels.
  • Put scallops,
  • 3 tbs yellow cornmeal,
  • 1/2 tsp each salt and paprika in a plastic bag,
  • shake to coat.

Directions
  1. Heat 1 tbs oil in a skillet.
  2. Add scallops and cook until golden and just opaque at centers.
  3. SERVE WITH THE SAUCE.
  4. Serve over hot, cooked rice.

This looks absolutely wonderful! I can't wait to try it. Would a chopped chipolte in adobo sauce work in place of the sauce?

I do think that the canned stuff will work just fine here.
