CRISPY SCALLOPS WITH CHIPOTLE TARTAR SAUCE

- Mix shopping list
- 1/2 cup tartar sauce, shopping list
- 2 tbs chopped scallions, shopping list
- 1 tbs orange juice, and shopping list
- 1 1/2 tsp chipotle hot pepper sauce in a bowl. shopping list

- Pat 1 pound sea scallops dry between layers of paper towels. shopping list
- Put scallops, shopping list
- 3 tbs yellow cornmeal, shopping list
- 1/2 tsp each salt and paprika in a plastic bag, shopping list
- shake to coat. shopping list
How to make it
- Heat 1 tbs oil in a skillet.
- Add scallops and cook until golden and just opaque at centers.
- SERVE WITH THE SAUCE.
- Serve over hot, cooked rice.
