Salmon With Avocado-lime Salsa

- 2 salmon steaks or fillets shopping list
- 1/2 tbsp. olive oil shopping list
- 1/4 tsp. salt shopping list
- 1/2 tsp. ground cumin shopping list
- 1/2 tsp. paprika shopping list
- 1/2 tsp. onion powder shopping list
- 1/4 tsp. ancho chili powder shopping list
- 1/2 tsp. fresh ground pepper shopping list
- For the salsa: shopping list
- 1 avocado,sliced shopping list
- 2 heaping tbsp. red onion shopping list
- juice from 1/2 lime shopping list
- 2 tbsp. chopped cilantro shopping list
- salt to taste shopping list
How to make it
- Mix the salt, chili powder, cumin, paprika, onion powder, and black pepper together.
- Rub the salmon with olive oil and then sprinkle both sides with the rub mixture. Place on a small greased baking tray and set aside.
- Combine the avocado, onion, cilantro, lime juice and salt in a bowl, and mix well. Chill until ready to use. I set the avocado pit in the salsa mixture until serving time so it doesn't turn brown.
- Bake fillets in 350F oven for about 20 minutes, depending hoe thick your salmon is, or until cooked through and flakes easily.
- Top with salsa. Enjoy!
