Jambalaya Soup

- 1 box jambalaya mix( Zatarains) shopping list
- 1 can diced tomatoes with pions and celery shopping list
- 1/2 pound sliced smoked sausage shopping list
- 1 1/2 cups diced cooked chicken shopping list
- 1 cup chopped onions shopping list
- 1 cup chopped celery shopping list
- 1/4 cup chopped bell pepper shopping list
- Tablespoon olive oil shopping list
- Tablespoon butter shopping list
- 3 cups low sodium chicken broth shopping list
- 3 cups beef broth shopping list
- Tsp dried parsley shopping list
- Dash hot sauce shopping list
- Tsp creole spice if desired shopping list
How to make it
- In large soup pot, sauté onions, celery, bell pepper and sausage until sausage is browned
- Stir in broths and bring to boil
- Stir in tomatoes and lower heat to medium high
- Stir in jambalaya mix and cook over med heat for 15-20 minutes
- Stir in chicken, spice and hot sauce and continue to cook another 15 minutes
- Before serving stir in parsley
- You can also add diced ham to this if desired
