Kentucky original sandwich spread and dip. "Benedictine" is a Louisville tradition invented around the turn of the previous century by Jenny Carter Benedict, whose catering shop and restaurant.

Ingredients
  • 1 onion
  • 1 cucumber, peeled
  • pinch salt
  • 8 oz. cream cheese, softened
  • Mayonnaise
  • Green food coloring.
  • M.S.G. (optional)

Directions
  1. Place all but mayonnaise and coloring in food processor and blend till smooth. Add mayonnaise until desired spread consistency is reached. Add a dash of M.S.G. and food coloring a drop at a time until spread is a pale green. Serve on sandwiches with bacon and bean sprouts or as a spread for canapés or as a dip for raw veggies.
