Tasty Taco Salad

- 1 lb. ground beef shopping list
- chopped onion shopping list
- shredded cheddar cheese shopping list
- one 2-1/4 oz. can sliced black olives, well drained shopping list
- chopped tomatoes or grape tomatoes shopping list
- shredded lettuce shopping list
- crushed bite-size tortilla chips shopping list
- Catalina salad dressing shopping list
How to make it
- In a large skillet, brown ground beef and drain any grease well. Cool completely. In a large salad bowl, combine beef, onion, cheese, olives, tomato, lettuce, and chips. Add just enough salad dressing to moisten mixture, but not drown it! Serve immediately. To make this ahead of time, which I prefer, combine all ingredients EXCEPT lettuce, chips, and salad dressing in a large salad bowl. Cover and refrigerate until ready to serve. Just before serving, mix in lettuce, chips, and dressing.
- Note: Other than the ground beef and olives, all ingredient amounts are “to taste”. This is best eaten the same day it's made. Once the lettuce, chips, and dressing are added, they make any leftovers soggy. If we want to have this two nights in a row, I follow the directions for making the salad ahead of time, but divide the ingredients between two bowls. Then I can mix in the lettuce, chips, and dressing at the last minute and serve it freshly made.
