How to make it

  • Start with the mayo. Add the egg yolk first into a medium size bowl (need a lot of room to whisk!) Next add in the vinegar, mustard and a little bit of salt and pepper. Whisk until well combined. SLOWLY start adding oil while vigorously whisking the whole time. This will take a good 5-10 mins. and yes it is a good arm workout :) If you add the oil too fast it will break and not be usable. Taste when done and add more salt if needed. See Photo
  • For the chicken salad just add everything into a bowl, including all of the mayo you just made and stir See Photo. Serve on bread or a crossiant, in a pita, or over a salad like I did this time :)
