Chicken Salad With Grapes And Homemade Mayo

- For the homemade mayo: shopping list
- 1 egg yolk shopping list
- 1 tsp. vinegar (coconut is perfect but can use white wine or apple cider) shopping list
- 1/2 Tbs. mustard (I use dijon) shopping list
- 1 cup avocado oil OR extra light olive oil shopping list
- S&P shopping list
- For the chicken salad: shopping list
- 2 1/2 cups chopped cooked chicken shopping list
- 1/2-1 cup grapes, halved shopping list
- 3 carrots, grated shopping list
- 1 jalapeno, chopped (can be omitted) shopping list
- 1 roasted pepper, chopped shopping list
- 1 tomato, chopped shopping list
- Handful cilantro, chopped shopping list
- 1 tsp. garlic powder shopping list
- 1 tsp. onion powder shopping list
- 1/2 tsp. paprika (smoked is really good in this) shopping list
How to make it
- Start with the mayo. Add the egg yolk first into a medium size bowl (need a lot of room to whisk!) Next add in the vinegar, mustard and a little bit of salt and pepper. Whisk until well combined. SLOWLY start adding oil while vigorously whisking the whole time. This will take a good 5-10 mins. and yes it is a good arm workout :) If you add the oil too fast it will break and not be usable. Taste when done and add more salt if needed. See Photo
- For the chicken salad just add everything into a bowl, including all of the mayo you just made and stir See Photo. Serve on bread or a crossiant, in a pita, or over a salad like I did this time :)
