How to make it

  • In a bowl, whisk together the flours, baking powder, baking soda and salt. Set aside.
  • In a large bowl, beat together the buttermilk, caramel sauce, eggs, egg white and vanilla extract.
  • Add the flour mixture and whisk until batter is thick and smooth (don't worry about overmixing here).
  • Let batter rest for 10 minutes.
  • Heat a greased griddle over medium heat.
  • Drop 1/4 cupfuls of batter onto the griddle and top with 3-4 banana slices.
  • Cook until bubbles form and the edges are dry, about 4 minutes.
  • Flip and cook until browned on the other side about 3 minutes. Repeat with remaining batter.
