Caramel Buckwheat Banana Pancakes

- 1 cup buckwheat flour shopping list
- 1/4 cup tapioca flour shopping list
- 1/2 tbsp baking powder shopping list
- 1/4 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 3/4 cup buttermilk shopping list
- 1/2 cup thin caramel sauce (like caramel-sauce.html">Simple Salted caramel Sauce ) shopping list
- 2 eggs shopping list
- 1 egg white shopping list
- 1 tsp vanilla extract shopping list
- 1 banana, sliced into thin "coins" shopping list
How to make it
- In a bowl, whisk together the flours, baking powder, baking soda and salt. Set aside.
- In a large bowl, beat together the buttermilk, caramel sauce, eggs, egg white and vanilla extract.
- Add the flour mixture and whisk until batter is thick and smooth (don't worry about overmixing here).
- Let batter rest for 10 minutes.
- Heat a greased griddle over medium heat.
- Drop 1/4 cupfuls of batter onto the griddle and top with 3-4 banana slices.
- Cook until bubbles form and the edges are dry, about 4 minutes.
- Flip and cook until browned on the other side about 3 minutes. Repeat with remaining batter.
