How to make it
- Slice the green parts of the green onion and set aside for later. Mince the white and light green parts and add it to a large bowl. Add the minced garlic, ginger, egg, water, soy sauce, panko bread crumbs, sesame oil, black pepper and ground beef. Mix together with your hands and form into 4 patty's. (the amount of bread crumbs depends on the moisture content of your beef) Place them on a plate and wrap in plastic wrap, store in the fridge for at least an hour. The longer they sit the more flavor they will have.
- Pickled Veggies: Mix the vinegar, sugar and water together in a glass bowl. Heat in the microwave for 30 seconds, stir until the sugar is dissolved. Add a pinch of salt. Place the veggies in an air tight container, a non reactive container like glass is best. Pour over the pickling liquid and let sit in the fridge for at least an hour before serving.
- Cook the burgers on a grill or pan over medium-high heat, approx. 5-6 minutes a side. (to your likeness of course!)
- Meanwhile mix the mayo with enough srirracha sauce to your taste. Place a generous dollop of sauce on your toasted sesame bun. Top with the burger, pickled veggies and green onions.
- Any leftover pickled veg can be added to some chopped lettuce, with the pickling liquid as a dressing with salt and pepper.
- Enjoy!
