How to make it

  • Slice the green parts of the green onion and set aside for later. Mince the white and light green parts and add it to a large bowl. Add the minced garlic, ginger, egg, water, soy sauce, panko bread crumbs, sesame oil, black pepper and ground beef. Mix together with your hands and form into 4 patty's. (the amount of bread crumbs depends on the moisture content of your beef) Place them on a plate and wrap in plastic wrap, store in the fridge for at least an hour. The longer they sit the more flavor they will have.
  • Pickled Veggies: Mix the vinegar, sugar and water together in a glass bowl. Heat in the microwave for 30 seconds, stir until the sugar is dissolved. Add a pinch of salt. Place the veggies in an air tight container, a non reactive container like glass is best. Pour over the pickling liquid and let sit in the fridge for at least an hour before serving.
  • Cook the burgers on a grill or pan over medium-high heat, approx. 5-6 minutes a side. (to your likeness of course!)
  • Meanwhile mix the mayo with enough srirracha sauce to your taste. Place a generous dollop of sauce on your toasted sesame bun. Top with the burger, pickled veggies and green onions.
  • Any leftover pickled veg can be added to some chopped lettuce, with the pickling liquid as a dressing with salt and pepper.
  • Enjoy!

    I made this tonight Bulgogi Inspired Beef Burgers. It is Cosmicmothers recipe - I love a good burger and this was a hit in our house tonight!! The flavors are definitely remisicent of bulgogi. The soy sauce, sesame oil and ginger really add great flavor to the meat, and then when you add the pickled veggies and the siracha mayo - wow!! So good - my husband was sad that I didn't make more :) . Will definitely be making it again!
