How to make it

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a baking rack sprayed with cooking spray. Soak skewers if you are using wooden one's.
  • Mix all of the meatball ingredients with your hands and roll into small-ish meatballs or use a 1 1/2 Tbs cookie scoop See Photo. I made mine too big this time, but learned my lesson for next :) Place on the baking sheet and bake for about 15 minutes or until cooked through.
  • While the meatballs are cooking, get your gas or charcoal grill going. Brush grill grates with oil to prevent sticking.
  • In a medium saucepan add sweet and sour sauce ingredients and mix well. Bring to a low boil, then simmer for about 10 minutes or until it starts to thicken.
  • When the meatballs are done and have cooled down enough to handle start skewering them alternating with the pineapple and bell peppers. Brush with sauce and grill for about 5-7 minutes a side, basting with the sauce often, and until you get some good color on them. Serve with the extra sauce on the side. They are great over rice, drizzled with the extra sauce :)

    What a fun and innovative way to make sweet ‘n sour pork. Absolutely delicious! This rating is more for the meatballs and the overall combination. The sauce didn’t turn out for me. However, it’s very possible I measured incorrectly so I can’t blame the recipe. To get it sweet, I had to add sugar. Also added cornstarch to get it to thicken.
