Queen Of The Carolinas Chowder Recipe
A great fish chowder made with tomatoes, snapper and shrimp, and thickened with starchy potatoes.

Ingredients
  • 1 tsp olive oil
  • 2 medium white onions, diced
  • 3 garlic cloves sliced
  • 28 oz. can diced tomatoes, drained
  • 3 Yukon Gold potatoes, peeled and diced
  • 5 cups fish stock
  • 1 tsp thyme
  • ¼ tsp dried parsley
  • 2 red snapper fillets, cut in 1” cubes
  • ½ lb medium shrimp, shelled and de-veined
  • ¼ tsp red pepper flakes
  • ½ tsp lime juice
  • ½ tsp ground black pepper

Directions
  1. Cook onions and garlic in olive oil over medium heat, approximately 4 minutes.
  2. Add tomatoes and stir, cooking two minutes.
  3. Add potatoes, stock, thyme and parsley.
  4. Bring to a rapid boil.
  5. Reduce heat to medium and cook uncovered 15 minutes.
  6. Add fish, shrimp, pepper flakes, lime juice and pepper. Stir well.
  7. Cook 5 minutes and serve hot.

I like it. The shrimp were throwing me for a minute, but I like the snapper and the pepper flakes. ...will have to give this a try. Thanks.
