Queen of the Carolinas Chowder

- 1 tsp olive oil shopping list
- 2 medium white onions, diced shopping list
- 3 garlic cloves sliced shopping list
- 28 oz. can diced tomatoes, drained shopping list
- 3 yukon gold potatoes, peeled and diced shopping list
- 5 cups fish stock shopping list
- 1 tsp thyme shopping list
- ¼ tsp dried parsley shopping list
- 2 red snapper fillets, cut in 1” cubes shopping list
- ½ lb medium shrimp, shelled and de-veined shopping list
- ¼ tsp red pepper flakes shopping list
- ½ tsp lime juice shopping list
- ½ tsp ground black pepper shopping list
How to make it
- Cook onions and garlic in olive oil over medium heat, approximately 4 minutes.
- Add tomatoes and stir, cooking two minutes.
- Add potatoes, stock, thyme and parsley.
- Bring to a rapid boil.
- Reduce heat to medium and cook uncovered 15 minutes.
- Add fish, shrimp, pepper flakes, lime juice and pepper. Stir well.
- Cook 5 minutes and serve hot.

I like it. The shrimp were throwing me for a minute, but I like the snapper and the pepper flakes. ...will have to give this a try. Thanks.
