How to make it

  • Preheat Oven to 400 Degrees F
  • In a lightly oiled large skillet, cook turkey meat and diced onions untill browned
  • Add the jar of tomato sauce and Italian seasoning
  • Cut the Eggplant and Zucchini into thin lengthwise strips and lay out in a single layer on a parchment covered baking sheet
  • Coat lightly with olive oil and season lightly with salt and pepper
  • Put in oven untill lightly browned While turkey meat is cooking
  • In a Baking dish: First, line the bottom with half the turkey mixture
  • Then, a single layer of the zuchinni
  • Then a layer of half of the low fat ricotta
  • Then half of the low fat mozzarella
  • Repeat steps 7-10 except step 8, this time with the eggplant instead of zucchini
  • Top with Parmesan Cheese and place in oven untill top becomes brown and bubbly, about 20 minutes.
  • Enjoy!
