No Noodle Turkey Lasagna

- 2 Medium zucchinis shopping list
- 1 Large eggplant shopping list
- 1 Lb Extra lean ground turkey shopping list
- 1 Jar of garlic and basil tomato sauce shopping list
- 1 onion Diced shopping list
- 1 1/2 Cups Low Fat ricotta cheese shopping list
- 1 Cup low fat mozzarella cheese shopping list
- 1/2 Cup Low Fat parmesan cheese shopping list
- 1 Tsp italian seasoning shopping list
- olive oil for Cooking shopping list
- salt and pepper For seasoning shopping list
How to make it
- Preheat Oven to 400 Degrees F
- In a lightly oiled large skillet, cook turkey meat and diced onions untill browned
- Add the jar of tomato sauce and Italian seasoning
- Cut the Eggplant and Zucchini into thin lengthwise strips and lay out in a single layer on a parchment covered baking sheet
- Coat lightly with olive oil and season lightly with salt and pepper
- Put in oven untill lightly browned While turkey meat is cooking
- In a Baking dish: First, line the bottom with half the turkey mixture
- Then, a single layer of the zuchinni
- Then a layer of half of the low fat ricotta
- Then half of the low fat mozzarella
- Repeat steps 7-10 except step 8, this time with the eggplant instead of zucchini
- Top with Parmesan Cheese and place in oven untill top becomes brown and bubbly, about 20 minutes.
