Guilt Free Fried Chicken Recipe
This is super easy and very low fat. It is a great way to stick to a low-fat diet and still have a great tasting meal!!!

Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon all-purpose flour
  • salt to taste
  • 1/4 teaspoon cayenne pepper, more or less to your liking
  • 3 ounces buttermilk
  • 1 cup corn flake crumbs or corn Chex® crumbs
  • non-stick cooking spray

Directions
  1. Pre-heat oven to 350°.
  2. Lightly coat a square baking dish with non-stick cooking spray. Set aside.
  3. In a bowl, combine flour, salt and cayenne powder.
  4. In 2 separate shallow pans, put the buttermilk in one and the cereal crumbs in the other.
  5. Roll chicken breast halves in flour and coat evenly on each side.
  6. Next, dip chicken in buttermilk then in cereal crumbs.
  7. Place chicken in baking dish.
  8. Bake for 30 minutes, or until chicken is no longer pink.
  9. Serve with salad and baked potatoe and vegetable.
