Robyns Famous Potato Salad Recipe

Ingredients

750g potatoes, cooked and cut into chunks

1 can beef bouillon

250g ham, cubed

1 red onion, cut in rings

150g tiny pickles (gerkins or dills), sliced lengthwise

100g cocktail onions, whole

1 small jar of capers, drained

2 Tbsp of vinegar

2 Tbsp olive oil

salt and pepper to taste

Directions

Cook the potatoes and cool.Cut into large chunks.

Cube the ham. You can use slices and cut in strips.

Mix together and add the pickles, capers, onions.

Mix together the oil and vinegar. Add the salt and pepper.

Gently stir into the salad.

Add can of bouillon a little at a time. How much you add will depend on how dry your potatoes are and how creamy you like the salad.

Refrigerate at least 2 hours so the flavours can blend.

I made this a couple weeks ago and forgot to get back to you.. I liked it..and it is great as you can take it and not worry about the mayo spoiling.. I make one kind of like it with steamed green beans.. Good post.. and good for my waist!
