Kolaczki Polish Christmas Cookies

- 5 cups all-purpose flour shopping list
- 4 egg yolks (save whites) shopping list
- 1 tablespoon baking powder shopping list
- 1 pound shortening shopping list
- 1 cup milk shopping list
- 4-.25 ounce packages of active dry yeast shopping list
- 1 teaspoon salt shopping list
- confectioners' sugar shopping list
- fruit jam; traditionally apricot and prune are used shopping list
- Nut filling I: shopping list
- 1 pound finely ground walnuts shopping list
- 1 teaspoon honey shopping list
- 1 cup sugar shopping list
- 3 egg whites shopping list
- 1 teaspoon cinnamon shopping list
- Cream shopping list
- Nut Filling II: shopping list
- 1 pound finely ground walnuts shopping list
- 2 cups sugar shopping list
- water shopping list
How to make it
- Warm milk to just above room temperature.
- Dissolve th yeast in the milk and set aside.
- In a medium bowl, stir together the flour, salt and baking powder.
- Cut in the shortening until the mixture is "mealy".
- Stir in the egg yolks and milk mixture.
- Knead the dough together and then refrigerate overnight.
- Nut Filling I:
- In a bowl, mix together the walnuts, honey, sugar, egg whites and cinnamon. Add just enough cream to make the mixture moist.
- Nut Filling II:
- In a bowl, mix together the walnuts, sugar and just enough water to form a thick paste.
- (I prefer Nut Filling I)
- When ready to bake:
- Preheat the oven to 350°.
- Dust a clean, dry surface with confectioners' sugar.
- Knead the dough roll for a few minutes.
- Carefully roll outyour dough to 1/4-inch thick.
- Cut out circles with a cookie cutter.
- Place a teaspoon of the jam or nut filling on the center of each circle.
- Fold the dough over and seal the edge with a fork.
- Repeat by alternating with jam(s) and nut filling.
- Bake for 12-15 minutes in the preheated oven.
- Dust with additional confectioners' sugar when cooled.
- Makes 4 dozen
- May be frozen for 6 months.
- Do not store in an air tight container or they will become soggy!!!
