Kolaczki Polish Christmas Cookies Recipe
I don't know of one Christmas that my Grammy did not make dozens of these. She made them more like triangles, but since her passing I simplified it by making them round.

Ingredients
  • 5 cups all-purpose flour
  • 4 egg yolks (save whites)
  • 1 tablespoon baking powder
  • 1 pound shortening
  • 1 cup milk
  • 4-.25 ounce packages of active dry yeast
  • 1 teaspoon salt
  • Confectioners' sugar
  • Fruit jam; traditionally apricot and prune are used
  • Nut filling I:
  • 1 pound finely ground walnuts
  • 1 teaspoon honey
  • 1 cup sugar
  • 3 egg whites
  • 1 teaspoon cinnamon
  • Cream
  • Nut Filling II:
  • 1 pound finely ground walnuts
  • 2 cups sugar
  • water

Directions
  1. Warm milk to just above room temperature.
  2. Dissolve th yeast in the milk and set aside.
  3. In a medium bowl, stir together the flour, salt and baking powder.
  4. Cut in the shortening until the mixture is "mealy".
  5. Stir in the egg yolks and milk mixture.
  6. Knead the dough together and then refrigerate overnight.
  7. Nut Filling I:
  8. In a bowl, mix together the walnuts, honey, sugar, egg whites and cinnamon. Add just enough cream to make the mixture moist.
  9. Nut Filling II:
  10. In a bowl, mix together the walnuts, sugar and just enough water to form a thick paste.
  11. (I prefer Nut Filling I)
  12. When ready to bake:
  13. Preheat the oven to 350°.
  14. Dust a clean, dry surface with confectioners' sugar.
  15. Knead the dough roll for a few minutes.
  16. Carefully roll outyour dough to 1/4-inch thick.
  17. Cut out circles with a cookie cutter.
  18. Place a teaspoon of the jam or nut filling on the center of each circle.
  19. Fold the dough over and seal the edge with a fork.
  20. Repeat by alternating with jam(s) and nut filling.
  21. Bake for 12-15 minutes in the preheated oven.
  22. Dust with additional confectioners' sugar when cooled.
  23. Makes 4 dozen
  24. May be frozen for 6 months.
  25. Do not store in an air tight container or they will become soggy!!!
