Ingredients
  • 3 slices proscuitto, paper-thin
  • 3 slices Genoa salame (or other very thinly sliced, delicious lunch meat)
  • 3 slices provolone cheese, very thinly sliced
  • (for the above, I buy the Citterio http://www.citteriousa.com/plates.html consumer packs available at Trader Joes. One of the nice things about these packs is that they stay fresh for more than a month in the back of your fridge if you don't open them, making it possible to buy it ahead and leave it there in anticipation of a day when you can't deal with cooking.   • 3 very thin slices of dark rye bread or other dense, dark bread thick with grains (I use Trader Joe's 100% rye bread)
  • mayonnaise (I use Vegannaise)
  • horseradish paste (optional)
  • optional: more thinly sliced cheese (I sometimes add gruyere)
  • optional: avocado
  • optional: sliced tomato
  • optional: mustard (I use the grainy stuff, when I use it)
  • optional: arugula, spinach, or lettuce, washed and dried

Directions
  1. Place the bread into the toaster oven, and lightly toast one side. (You can also use the broiler, if you don't have a toaster oven.)
  2. Remove bread from toaster oven, flip over, and place provolone cheese on the bread. Place back in the toaster oven. Turn dial to 'medium' to toast for long enough until the bread is quite crisp and the cheese is melted. Remove from toaster oven and place on a cutting board. (Remember to use caution! Even in a toaster oven things get hot. You'll want to set down Discipline and Punish for a minute. Avoid setting in the mayonnaise.)
  3. Place 1 slice of each of the Italian meats onto each piece of bread over the cheese. Add some mayonnaise on top, and a dollop of horseradish, if desired. Mix them together on top. It'll be a little messy, so you might want to stop reading for a few minutes. Add other ingredients on top if you choose to use anything else.
  4. Eat and enjoy.
  5. I find that 1.5 of these little calorie-dense sandwiches are about right for me when I am completely starving, so this recipe is about right for a couple. You might want to make one more. The advantage of making 3 is that they all manage to fit in a toaster oven at once. :) If you have the time, steam some green beans or make a simple vegetable salad to accompany it. Or if you don't, be sure to take a multivitamin. You can only eat so much ham and cheese. . . Now back to Michel.

Wow. This sounds so good. Fantastic post.


Oh yum yum yum. This makes me think of sitting outside Ultra Lucca scarfing proscuitto by the half-pound. It makes me want to come visit solely so we can snack on this. It's like the perfect food. It's actually kind of ridiculous how perfect it is.
