Caribbean Grilled Tilapia with Mango Salsa

- 4 fresh tilapia fillets shopping list
- 1/2 cup extra virgin olive oil shopping list
- 1/3 cup white wine shopping list
- 2 teaspoons caribbean jerk seasoning shopping list
- 1 tablespoon dried parsley flakes shopping list
- 8 ounce can sliced pineapple in its own juice shopping list
- Salsa: shopping list
- 2/3 cup chopped mango shopping list
- 2 tablespoons fresh squeezed lime juice shopping list
- 2 tablespoons fresh squeezed orange juice shopping list
- 4 rounded teaspoons jalapeno peppers very finely chopped shopping list
- 4 rounded teaspoons finely chopped red onions shopping list
- 2 rounded teaspoons finely chopped red bell pepper shopping list
- 2 rounded teaspoons finely chopped green bell pepper shopping list
- 1 teaspoon dried parsley flakes shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Mix olive oil, wine and parsley then marinate fish in the mixture for 1 hour.
- Place fish on well oiled hot grill.
- Sprinkle fish with half of the jerk seasoning and half of the pineapple juice.
- Baste some of the oil marinade on the pieces of fish.
- Place pineapple slices on grill as well.
- Turn fish over and sprinkle with remaining seasonings.
- Add pineapple juice and oil marinade as on first side.
- Flip pineapple slices.
- Serve fish with pineapple slices and top with mango salsa.
- To make salsa mix all ingredients well and refrigerate for an hour or more before serving.
