This salad (without the chile) is a standard Chinese cold starter. Add more garlic or mash the garlic thoroughly if you enjoy it like that.

Ingredients
  • 3 smallish cucumbers, washed, halved and cut into bite sized chunks
  • 4 or more cloves garlic, smashed with the side of a cleaver, peeled, roughly chopped
  • 1/4-1/2 tsp salt
  • 1 tsp sugar or to taste
  • 1 Tbsp white vinegar or to taste
  • hefty pinch Korean red pepper powder or 1-2 crushed dried red chilies.
  • a few drops sesame oil (optional)
  • a good pinch crushed Sichuan pepper (optional)

Directions
  1. Mix
  2. Taste (adjust)
  3. Let sit 20 minutes or more (optional)
  4. Serve
  5. (you can add a minute pinch of MSG or a drizzle of chile)
