Spanakorizo Recipe
A heavenly greek side dish - my kids love it .

Ingredients
  • 1/3 cup olive oil
  • 2 onions, chopped
  • 2 pounds fresh spinach, rinsed and stemmed
  • 1 (8 ounce) can tomato sauce
  • 2 cups water
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • 1/2 cup uncooked white rice
  • fetta cheese and lemon juice to taste .

Directions
  1. Heat olive oil in a large skillet over medium-high heat. Saute onions in the oil until soft and translucent.
  2. Add spinach, and cook stirring for a few minutes, then pour in the tomato sauce and water.
  3. Bring to a boil, and season with parsley, salt and pepper.
  4. Stir in rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender.
  5. Add more water if necessary.
  6. when finished crumble fetta cheese and lemon juice over the top .

Only way the rice haters in the house would eat rice, with spinach and feta! Yeah. (used a bit of garlic too.)

Alterations


forgot --- add some crumbled fetta cheese for more yumminess !


also a squeeze of lemon juice over top before serving is good .
