Rocky Road Icing Recipe

Ingredients

2 squares unsweetened chocolate

2 cups minature marshmallows

1/4 cup water

1 stick butter

2 cups sifted confectioners' sugar

1 teaspoon vanilla

1/2 cup finely minced peanuts or walnut meats

Directions

In a saucepan, place chocolate, 1 cup of marshmallows, water and butter.

Heat over low heat until well blended.

Cool slightly.

Add sugar and vanilla.

Beat until smooth and slightly thick, about 2-3 minutes.

Stir in remainder of marshmallows and the nuts.
