Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup shortening

1 cup packed brown sugar

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

2 cups quick cooking oats

2 cups crisp rice cereal

1 cup shredded coconut

Directions

Mix, flour, salt and soda together.

Cream shortening until fluffy.

Add sugar gradually and beat until smooth and creamy.

Add eggs one at a time beating well after each one.

Stir in vanilla and flour mixture then add cereal, oat, and coconut.

Form into small balls and place on greased cookie sheets and bake at 350 for 15 minutes.

This has me as intrigued as those pb cookies that only have pb, sugar and an egg. I can't imagine how these two recipes can possibly bake into cookies! Will have to give them a try.
