Mexican Easy Breakfast Recipe

Ingredients

7 medium eggs (If you want you can use just egg whites (for my tortilla i use them and it tasted as good as the normal whole scrambled eggs) use about 9 egg whites)

10 mushrooms.

6 polony sausages (or any sausage you like)

Guacamole (we made it using 3 avocados, 2 tomatoes, chili sauce, salt, pepper and 1 1/2 tablespoon of light sour cream)

Grated cheese (we use tasty)

6 flour tortillas

Directions

We made the guacamole and grated the cheese the night before.

Preheat oven at 100 C.

Cook the sausages in a pan

When the sausages are cook, put the eggs (in the same pan) and the mushrooms and mix all.

Spread the tortillas with the guacamole, then put the scrambled eggs mixture, cheese and fold it in half

On the top put a little bit of cheese.
