Pasta Salad with Avocado and Peppers

- 8 oz penne or other short macaroni style-pasta shopping list
- 1/2 c prepared vinaigrette shopping list
- 3/4 c diced red bell pepper shopping list
- 3/4 c diced green bell pepper shopping list
- 3/4 c crumbled feta cheese shopping list
- 1/2 c chopped onion (sweet red onions are very nice in this) shopping list
- 1/3 c chopped black olives (or kalamata or other similar) shopping list
- 3 T chopped fresh parsley shopping list
- 1 garlic clove, finely chopped shopping list
- 2 large ripe avocados shopping list
- 1 T lemon juice shopping list
How to make it
- Cook pasta in salted boiling water until just tender, about 10 minutes; drain well.
- Place warm pasta in a bowl and toss with vinaigrette, let cool.
- Fold in peppers, feta, onion, olives, parsley and garlic. Chill.
- Bring salad to room temperature.
- Cut avocados into chunks, toss with lemon juice. Fold into salad.
- Serve and enjoy!

This sounds wonderful! Thanks! I love avocados and all of the other ingredients in it. I bet shrimp or chicken would be good in it too.
