Cold Blueberry Pie Recipe
This cold version of blueberry pie is a light, refreshing dessert, perfect for summer get-togethers!

Ingredients
  • 4 c. fresh blueberries
  • 3/4 c. sugar
  • 1/4 c. water
  • 2 Tbs. cornstarch
  • 1/4 tsp. salt
  • 1 Tbs. butter
  • 1 Tbs. lemon juice
  • 1 - 9" baked pie crust

Directions
  1. Place 2 cups of fresh blueberries into the baked pie crust. Set aside.
  2. In a medium saucepan, mix together the cornstarch, salt, and sugar. Add the water and remaining 2 cups of blueberries.
  3. Cook over medium heat, stirring frequently, until the sauce is clear and thick (between 5-10 minutes, depending upon your stove).
  4. Remove from heat and stir in the butter and lemon juice.
  5. Cool slightly.
  6. Pour the sauce over the fresh berries in the pie crust and chill until set, usually about 4 hours.

This looks delish! -- Reading the ingredients just now, and seeing the lemon juice; made me think of the lemon curd recipe I saved last night. Wouldn't a dollop of lemon curd on a slice of this cold blueberry pie be the bomb?! Gonna have to try it!
