How to make it

  • Place 2 cups of fresh blueberries into the baked pie crust. Set aside.
  • In a medium saucepan, mix together the cornstarch, salt, and sugar. Add the water and remaining 2 cups of blueberries.
  • Cook over medium heat, stirring frequently, until the sauce is clear and thick (between 5-10 minutes, depending upon your stove).
  • Remove from heat and stir in the butter and lemon juice.
  • Cool slightly.
  • Pour the sauce over the fresh berries in the pie crust and chill until set, usually about 4 hours.

    This looks delish! -- Reading the ingredients just now, and seeing the lemon juice; made me think of the lemon curd recipe I saved last night. Wouldn't a dollop of lemon curd on a slice of this cold blueberry pie be the bomb?! Gonna have to try it!
