- 2 whole chickens, about 3 pounds each, cut up shopping list
- salt and pepper shopping list
- 1 cup cream of coconut, such as coco lopéz shopping list
- 2 tablespoons fresh lemon juice shopping list
- 6 medium bananas shopping list
- 2-1/2 cups corn flake crumbs shopping list
- 3/4-1 cup butter, melted shopping list
How to make it
- Preheat oven to 350°.
- Sprinkle chicken pieces on all sides with salt and pepper.
- In a bowl, mix cream of coconut and lemon juice.
- Peel bananas and cut into halves crosswise.
- Brush chicken and bananas thickly with coconut mixture and then roll into corn flake crumbs.
- Press firmly so the crumbs stick.
- Brush a baking dish with some of the melted butter.
- Place chicken pieces in a single layer into the pan and drizzle with about 1/2 the butter.
- Bake at 350° for 45 minutes.
- Add bananas and drizzle with remaining butter.
- Bake another 15 minutes and serve.
