How to make it

  • Preheat oven to 350°.
  • Sprinkle chicken pieces on all sides with salt and pepper.
  • In a bowl, mix cream of coconut and lemon juice.
  • Peel bananas and cut into halves crosswise.
  • Brush chicken and bananas thickly with coconut mixture and then roll into corn flake crumbs.
  • Press firmly so the crumbs stick.
  • Brush a baking dish with some of the melted butter.
  • Place chicken pieces in a single layer into the pan and drizzle with about 1/2 the butter.
  • Bake at 350° for 45 minutes.
  • Add bananas and drizzle with remaining butter.
  • Bake another 15 minutes and serve.
