Moms Spinach Pie

- 10 oz. package frozen spinach – defrost and squeeze out water. shopping list
- 1 large onion shopping list
- butter or margarine shopping list
- 2 eggs - beaten shopping list
- 8 oz. mozzarella (I use part skim) shopping list
- 15 oz. ricotta (ditto) shopping list
- salt, pepper to taste (sometimes I add a little cinnamon) shopping list
- frozen pie shell shopping list
How to make it
- Preheat oven to 400 degrees. Let pie shell defrost on counter.
- Chop onion and sauté until translucent, not brown.
- Chop up mozzarella.
- Mix mozzarella, ricotta, eggs. Add spinach, sautéed onions, salt and pepper. Mix well.
- Turn into pie shell.
- Place in oven for about 1 hour until top is raised and browned.
- Cut and eat.
