Bourbon amp Molasses Marinated Pork Tenderloins with New World Chutney

- Pork: shopping list
- 2 1-lb pork tenderloins shopping list
- 3/4 cup molasses shopping list
- I T. brown sugar shopping list
- 1 T. truffle oil (optional) shopping list
- ½ cup strong bourbon like Jim Beam shopping list
- 1 T, crushed garlic shopping list
- 2 T. worcestershire sauce shopping list
- 2 T. olive oil. shopping list
- New World Chutney: shopping list
- 2 small (mandarin) oranges, peeled with peel of 1 orange retained shopping list
- 2 cups apple cider or apple juice shopping list
- 2 T. minced ginger shopping list
- ¼ cup sliced shallots shopping list
- ¾-1 cup dried apricots, chopped shopping list
- 1 large fuji apple, cored and chopped shopping list
- 1 12-oz bag fresh cranberries shopping list
- ½-1 cup sugar, or to taste shopping list
- 1 t. ground cloves shopping list
- 1 t. ground cinnamon shopping list
- 2 t. Chinese 5 Space shopping list
- 1 star anise shopping list
How to make it
- PORK
- 2 1-lb pork tenderloins
- 3/4 cup molasses
- I T. Brown Sugar
- Rinse pork and cover with other ingredients. Marinate for 24 hours, Prepare grill for indirect heat. On oiled grill, sear all side of the tenderloins over direct heat, watching for burning. Then put in the cooler middle of the grill until it reaches medium rare. Serve with my own New World Chutney ( or Major Grey’s chutney) and roasted potatoes..
- New World Chutney:
- Section the oranges. Lightly scrape the inside of the peel and cut the peel into strips.
- In a medium saucepan, bring the cider, shallots, ginger, apricots and peel to a boil. Add apple and spices and cook until the apple has softened. Add the cranberries and the sugar sparingly (you can always add more). Cook over low heat about 10-15 minutes until the cranberries have popped. Adjust sugar and seasonings. Remove the anise.

The pork itself sounds wonderful with the garlic-whiskey marinate, but it was your New World Chutney that makes me look again! I love using star anise, and the fruits, shallots & spices would balance out the smokey pork beautifully! Move over, Major ...more
