So easy tasty and healthy to boot. It's a great way to start off the day that will send you out the door with a smile on your face.

Ingredients
  • 2 slices bread
  • 1/2 cup cottage cheese
  • 1/4 ts vanilla
  • 1/4 ts cinnamon
  • 1/4 ts sugar or sweetner or to taste

Directions
  1. Toast the bread.
  2. Mix the cottage cheese, vanilla, cinnamon and sweetner (play around with cinnamon and sweetner to your particular taste).
  3. Spread mixture onto the toast.
  4. Put under broiler for 2 to 3 minutes (watch to make sure doesn't burn) till cottage cheese mixture gets a bit bubbly.
  5. Remove, put on plates and enjoy

Also great with low fat ricotta instead of cottage cheese. For a COLD ONE, spread on a caramel flavored RICE CAKE...the hint of sweet makes you think you are really INDULGING. Enjoy.
