How to make it

  • Heat oven to 325F. Grease and flour 2 layer 8x1-1/2 pans
  • Beat egg whites until foamy, beat in the cup of refined sugar, 1
  • tablespoon at a time; continue beating until stiff and glossy, do not underbeat, but watch carefully the gloss. Set aside.
  • Blend shortening, confectioners' sugar, egg yolks, and milk on low,
  • scraping the bowl constantly, Add flour, baking powder and salt, beat 1 minute at medium, scraping bowl ocasionally.
  • Spread in pans
  • Over each pan spread the meringue, almonds and remaining 2 tablespoon sugar.
  • Bake 35 to 40 minutes Cool
  • For assemblying, sandwich the two together so that you have 1 meringue layer in center and 1 in top. Enjoy
