Butterscotch Zucchini Spice Cookies

- 2 cups spelt flour shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tsp ground clove or other spices shopping list
- 5 Tbsp olive oil shopping list
- 1 cup sugar shopping list
- 1 Tbsp honey shopping list
- 1 egg shopping list
- About 1 cup grated zucchini shopping list
- 1 cup butterscotch chips shopping list
How to make it
- Preheat oven to 350 degrees F.
- In medium bowl sift together flour, baking soda, salt, and spices.
- In large bowl, mix together olive oil, sugar, and honey until well blended.
- Beat in egg thoroughly, then zucchini.
- Add flour mixture little by little. The dough will be batter-like and rather sticky. It should look kind of like Ogre snot.
- When it comes together, stir in chips.
- Spoon dollops onto cookie sheet, about two inches apart. Batter will spread some, but should hold together somewhat well.
- Bake for 13-15 minutes.

another great recipe. I am going to try these soon but just omit the sugar all together and add more honey.. I love honey and olive oil together.
