Ingredients
  • 2 cups spelt flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground clove or other spices
  • 5 Tbsp olive oil
  • 1 cup sugar
  • 1 Tbsp honey
  • 1 egg
  • About 1 cup grated zucchini
  • 1 cup butterscotch chips

Directions
  1. Preheat oven to 350 degrees F.
  2. In medium bowl sift together flour, baking soda, salt, and spices.
  3. In large bowl, mix together olive oil, sugar, and honey until well blended.
  4. Beat in egg thoroughly, then zucchini.
  5. Add flour mixture little by little. The dough will be batter-like and rather sticky. It should look kind of like Ogre snot.
  6. When it comes together, stir in chips.
  7. Spoon dollops onto cookie sheet, about two inches apart. Batter will spread some, but should hold together somewhat well.
  8. Bake for 13-15 minutes.

I think I found 10 new zucchini recipes tonight - we must all be harvesting zucchine or enjoying the abundance of neighbors! These cookies will be a must - great flavors...thank you.


Another great recipe. I am going to try these soon but just omit the sugar all together and add more honey.. I love honey and olive oil together.

Alterations


Me and my son made these tonight, here is what we did differently. We used 1/3 cup olive oil and a little over 1/3 cup honey, omitting the white sugar. Also we skipped the butterscotch and used Orange flavored Craisins, which went very good with the Zucchini, this recipe made enough for him to take two a day to school lunch for this week with him plus he had to have two tonight with his tea. After trying one I'm thinking that some organic orange zest would be a great addition to.

Thanks so much. You should not be afraid to try this way out yourself! just add 5 more minutes to the cook time.
