French Canadian Pea Soup Recipe
This is an awesome soup especially on a cold day when you want comfort food. I have made this on several occasions and always enjoy it.

Ingredients
  • 1 pound dried peas
  • 1/4 cup grated carrots
  • 8 cups water
  • 1/4 cup fresh parsley chopped
  • 1/2 pound salt pork
  • 1 small bay leaf
  • 1 large white onion chopped
  • 1 teaspoon dried savory
  • 1/2 cup chopped celery
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Wash and sort peas then soak in cold water overnight.
  2. Drain and place in a large pot then add water, parsley, salt pork, onion, celery, carrots, parsley, bay leaf, savory and salt.
  3. Bring to a boil, reduce heat and simmer 2 hours.
  4. Remove salt pork then chop and return to soup.
  5. Discard bay leaf and season with salt and pepper.

I have made this for years but I use whole yellow peas and hominy corn. Great with crusty bread.


This was one of my faves outta the can - good ol' Habitant soup. This looks a tad more nutritious though!
