Fresh Tomato Mushroom Salsa Recipe
This is an unusual but very good way to make salsa. I purchased this from an estate sale in Kaufman, Texas. Very fresh and very tasty. Enjoy.

Ingredients
  • 6 large ripe plum tomatoes
  • 2 cloves garlic finely minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh Italian parsley chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons shallots finely chopped
  • 1 cup fresh mushrooms diced

Directions
  1. Combine all ingredients in a glass bowl and toss well.
  2. Refrigerate covered 3 hours to blend flavors.

What do you do with the tomatoes? Chop, dice, mash??


This sounds like a good recipe... My boyfriend is allergic to both onions and bell peppers, so we can't have a lot of salsas. But he does love mushrooms so I will have to give it a try! Thanks!
