How to make it

  • Heat oven to 350°.
  • Remove shells from hard-cooked eggs.
  • Halve eggs lengthwise.
  • Carefully remove yolks and place them in a bowl.
  • Add ham, mustard powder, onion powder, salt, pepper, and mayonnaise.
  • Blend well.
  • Fill egg white halves with yolk mixture and set aside.
  • Melt about 1/3 cup butter in a saucepan over medium heat.
  • Add mushrooms, cook and stir until tender.
  • Stir in flour, thyme, salt and pepper.
  • Cook 1 minute until smooth and bubbly, stirring constantly.
  • Gradually stir in milk and chicken broth.
  • Cook sauce over medium heat until slightly thickened and bubbly, stirring constantly.
  • Spoon about 1 cup of the sauce into the bottom of a 12x8-inch baking dish.
  • Arrange egg halves over sauce.
  • Spoon remaining sauce over egg halves.
  • In a small bowl, combine 2 tablespoons melted butter and bread crumbs.
  • Sprinkle evenly over eggs
  • Bake for 20 minutes.
  • Sprinkle with shredded mozzarella cheese.
  • Bake an additional 5 minutes or until cheese is melted.
