Stuffed Eggs with Mushroom Sauce

- 8 eggs, hard-cooked shopping list
- 1/2 cup finely chopped cooked ham shopping list
- dry mustard powder to taste shopping list
- onion powder to taste shopping list
- salt and pepper, to taste shopping list
- 1/4 cup mayonnaise shopping list
- 1/2 cup butter, 2 tablespoons of it melted shopping list
- 1-1/2 cups sliced fresh mushrooms shopping list
- 1/3 cup all-purpose flour shopping list
- 1/4 teaspoon thyme leaves shopping list
- 2 cups milk shopping list
- 3/4 cup chicken broth shopping list
- 1/2 cup dry bread crumbs shopping list
- shredded mozzarella cheese shopping list
How to make it
- Heat oven to 350°.
- Remove shells from hard-cooked eggs.
- Halve eggs lengthwise.
- Carefully remove yolks and place them in a bowl.
- Add ham, mustard powder, onion powder, salt, pepper, and mayonnaise.
- Blend well.
- Fill egg white halves with yolk mixture and set aside.
- Melt about 1/3 cup butter in a saucepan over medium heat.
- Add mushrooms, cook and stir until tender.
- Stir in flour, thyme, salt and pepper.
- Cook 1 minute until smooth and bubbly, stirring constantly.
- Gradually stir in milk and chicken broth.
- Cook sauce over medium heat until slightly thickened and bubbly, stirring constantly.
- Spoon about 1 cup of the sauce into the bottom of a 12x8-inch baking dish.
- Arrange egg halves over sauce.
- Spoon remaining sauce over egg halves.
- In a small bowl, combine 2 tablespoons melted butter and bread crumbs.
- Sprinkle evenly over eggs
- Bake for 20 minutes.
- Sprinkle with shredded mozzarella cheese.
- Bake an additional 5 minutes or until cheese is melted.
