Ingredients

How to make it

  • Mix cheeses together, adding the ham, onion, chilies, olives.
  • Split the muffins and spread generously with the filling.
  • Sandwich back together.
  • Beat eggs with half and half, season with hot sauce, salt and pepper.
  • Melt butter in large skillet til foaming.
  • Dip English Muffins in the batter, flipping once.
  • Grill in the foaming butter until golden brown on each side.
  • Serve with a dollop of salsa and sour cream.
  • I guess we could have called it "English French Tex Mex Toast" if we were creative.

    These so sounds really tasty - I love english muffins, and there hold up so well for dishes like this. Great idea, notcho (and thank your daughter for me, too!).

    We really just had dabs of this and that left over from a relish tray (nibbles from Labor day) and I hated to toss out any of it. And the daughter said, mix it in cheese for our bagels and then we both thought, hmmmm stuffed muffins. Have to love that child. She does think outside of the box, sometimes. Yeah!
