My daughter (like me) loves eggnog - this will be a MUST as soon as I see eggnog in the milk aisle this year!

Oooh, I'd make eggnog just to make these muffins! Love both eggnog and muffins...

Darn... I wish I saw this recipe 2-3 months ago. Gotta wait all year for egg nog to come back. I've got an Eggnog Quick Bread that is yummy too. We don't usually have a problem with "leftover" eggnog at our house. My youngest LOVES "Christmas Milk" as he calls it. I'm lucky to get any.

Waited all year to make these... so happy I did! Here were my mods:
1 cup spelt flour and 1 cup AP
1 tsp pumpkin pie spice instead of the nutmeg
1 1/4 cups eggnog, no water
canola oil instead of melted butter
added 1/4 cup dried cranberries
All in all... SUBSTANTIAL hit with the family. They and I thank you!!
