Tomato Concentrate Recipe
I found this in a cookbook after my local grocery store was out of sun-dried tomatoes. I actually like this better now. Use in recipes calling for sun-dried tomatoes. I usually double this to keep some on hand.

Ingredients
  • 1 (28 ounce can) whole tomatoes (see note below)
  • 2 bay leaves
  • 1 tablespoon granulated sugar
  • 8 to 10 sprigs fresh herbs (thyme, oregano, marjoram or a combination)
  • 1 tablespoon kosher salt

Directions
  1. Note: I use the plum tomatoes packed in tomato juice for this.
  2. Halve tomatoes, remove seeds and drain well.
  3. Pat tomatoes dry.
  4. Gently toss tomatoes with remaining ingredients.
  5. Arrange in single layer on rimmed baking sheet.
  6. Bake at 300 degrees for 30 minutes to 2 hours or until moisture is completely gone.
  7. Cool.
  8. Store in air tight container.

I will try this... I always wanted to make my own sun dried, but did not know how...
