Tomato Concentrate

- 1 (28 ounce can) whole tomatoes (see note below) shopping list
- 2 bay leaves shopping list
- 1 tablespoon granulated sugar shopping list
- 8 to 10 sprigs fresh herbs (thyme, oregano, marjoram or a combination) shopping list
- 1 tablespoon kosher salt shopping list
How to make it
- Note: I use the plum tomatoes packed in tomato juice for this.
- Halve tomatoes, remove seeds and drain well.
- Pat tomatoes dry.
- Gently toss tomatoes with remaining ingredients.
- Arrange in single layer on rimmed baking sheet.
- Bake at 300 degrees for 30 minutes to 2 hours or until moisture is completely gone.
- Cool.
- Store in air tight container.
