Braunschweiger Canapes Recipe
A quick, easy and original canape. Got this from a friend 30 years ago. Simple but elegant. Now if I can just remember to take a picture before we eat them all up.

Ingredients
  • 8 ounces Braunschweiger
  • 1/4 cup Ketchup
  • 1 tablespoon pickle juice
  • 4 each Sweet pickle, sliced 1/8-inch thick
  • 45 each Ritz Crackers

Directions
  1. Mix Braunschweiger, Ketchup & Pickle Juice in a bowl. Blend together.
  2. Spread mixture on Ritz Cracker and top with pickle slice.

I grew up having something similar but with thousand island dressing instead of ketchup.
I just didn't know it was a canape that I eagerly gobbled down as a child. My dad loved it on bread, as a sandwich. It's so easy to make and tastes so good! YUMMM


Please tell me: what exactly is Braunschweiger? It sounds like the German city of Braunschweig, but I never heard about anything called Braunschweiger (except for the people living in Braunschweig)....


Braunschweiger (named after Braunschweig, Germany) is a type of liverwurst (pork liver sausage), which is nearly always smoked.


Thank you, dugger! I also googled it up, since I really never heard about it (I`m from Germany`s South-West originally) - it is known as regional specialty, different from the one sold in the US in texture and ingredients...


Dugger, would you believe my husband (who HATES liver) argued me DOWN about this,telling me it DID NOT have liver in it until I showed him the ingredients and he's been eating and loving it for over 50 yrs ???? lol !!!

LOL.. well I also have relatives who don't like liver, I just tell them it's Pork Sausage. Never mind what part of the pig.... :) Truth is I don't much care for liver cooked as a meat, but as a sausage or pate' it is fine.


Don't know if I love Braunschweiger because I love liver...especially pate...or if it's because this is one of the only things my mom ever served. She hated to cook. Thanks for sharing this memory.

You've brought back some fun memories. When "the love of my life" and I were much younger, we were on a very tight budget. Wednesday nite was our date night. We'd go to a movie, buy a cheap bottle of wine on the way home. Make the Braunschweiger Canapes (using mayo) and called it liver pate'.Oh my what more can a gal ask for...cheap wine and Braunschweiger. Great Post!!!

Substitute thousand island dressing for ketchup.


That is a good idea. I'll try that. Of course you are talking to a guy who used to eat peanut butter with thousand island as a sandwich for lunch... LOL
