Ingredients
  • 4 medium oven (baking, Russet) potatoes.
  • 1 tsp salt
  • 2 to 3 TBSPS melted butter
  • 2 to 3 TBSPS chopped fresh herbs such as parsley, chives, thyme or sage OR 2 to 3 tsps dried herbs of choice
  • 4 TBSPS grated cheedar cheese
  • 1 1/2 TBSPS grated Parmesan cheese

Directions
  1. Preheat oven to 425 F.
  2. Peel potatoes ONLY if the skin is tough; otherwise, just scrub and rinse them well. Cut potatoes into thin slices -- but NOT all the way through. HINT: Use the handle of a spoon under the potato to prevent the knife from cutting all the way through.
  3. Put potatoes in a baking dish. Fan them open slightly. Sprinkle with salt and drizzle with butter. Sprinkle the potatoes with herbs.
  4. Bake in preheated oven for about 50 minutes, or until very lightly browned on the top edges, the cheeses are melted, and the potatoes are soft insdie.
  5. MICROWAVE METHOD: Prepare (slice) as above, but omit the salt for later. Microwave on HIGH power for 10 minutes, rearranging and rotating potates after 5 minutes. Let rest for 5 minutes, then sprinkle with butter, herbs, cheeses. Microwave for another 4 to 6 minutes at HIGH, or until cheeses are melted and potatoes are soft. Sprinkle with salt and serve. NOTE: they will not be as crispy if microwaved; try half-microwave, half-oven baked, if desired.

Excellente! Made these last night everyone loved them. I used shredded cheddar on half and on the other half I used the new Select Bistro Shredded Cheese-Sun Dried Tomato Basil,with a mix of Monterey Jack and Mozarella. Definitely a keeper for us. Thanks
