How to make it

  • Cook spaghetti according to package directions. Drain, reserving a little of the cooing water.
  • Cut the bacon into pieces and place in a medium saucepan..Cook bacon and garlic together till bacon is crispy. Turn heat to low.
  • In a bowl whisk together the eggs
  • Quickly turn the spaghetti into the pan with the cbacon, fat and garlic and then stir in the eggs, a little salt, lots of pepperand half of the cheese.. Toss well to mix unitl eggs become glossy. If dish seems try add a little of the cooking water.
  • ***Frozen cooked peas--about a cup--- can be added to the mix . Top with diced tomatoes , if desired---adds color . I watched my friend in Italy make this dish--she said the secret lies in adding the eggs and chees quikly to the hot pasta

    Wonderful. I added a little bit of 1/2 and 1/2 for an added creamy texture without being too heavy from cream. Lots of pepper as carbon is coal in translation!
