- HOW MANY: Enough sweet potatoes for everybody!! shopping list
- 1 stick unsalted butter shopping list
- 1 cup brown sugar shopping list
- salt shopping list
How to make it
- Peel and slice sweet potatoes crosswise, about 1/2 inch thick
- Heat skillet with about 1/2 inch oil
- Layer sweet potatoes one a time in the skillet to fry light brown, turning as needed, and sprinkling with a little salt
- Fry a few minutes, THEN
- Remove to bowl
- Pour off excess oil
- Melt one stick butter in iron skillet and add 1 cup brown sugar
- Return sweet potatoes to skillet, keep turning them gently until done and making sure they are coated well with sugar and butter
- You can test to see if they are done
- NOTE: For SAVORY SWEET POTATOES, fry in 1/4 inch oil, and a little olive oil. Omit the sugar, but add the butter. Cook covered. Add cumin, black pepper, or a little rosemary, and even some carmelized onions!
