Ingredients

How to make it

  • Peel and slice sweet potatoes crosswise, about 1/2 inch thick
  • Heat skillet with about 1/2 inch oil
  • Layer sweet potatoes one a time in the skillet to fry light brown, turning as needed, and sprinkling with a little salt
  • Fry a few minutes, THEN
  • Remove to bowl
  • Pour off excess oil
  • Melt one stick butter in iron skillet and add 1 cup brown sugar
  • Return sweet potatoes to skillet, keep turning them gently until done and making sure they are coated well with sugar and butter
  • You can test to see if they are done
  • NOTE: For SAVORY SWEET POTATOES, fry in 1/4 inch oil, and a little olive oil. Omit the sugar, but add the butter. Cook covered. Add cumin, black pepper, or a little rosemary, and even some carmelized onions!

This is EXACTLY the way my mother makes them but since we are not communicating right now, I had to get the recipe off the net. Sad but true........Thanks
