New Mexico Green Chile Sauce Recipe

Great green chile sauce for topping enchiladas or as a tortilla chip dip.

Ingredients
  • 1 tablespoon butter or margarine
  • 2 tablespoons chopped onion
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 cup (or more) chopped green chiles
  • 1 large clove garlic, finely minced
  • Salt (optional)
  • 1/4 teaspoon ground cumin

Directions
  1. Melt the butter in a saucepan over medium heat.
  2. Saute the onion until soft.
  3. Stir in the flour and the broth until mixture is smooth.
  4. Add chiles, garlic, cumin and simmer for 10 to 15 minutes, adding salt if desired.
  5. Yield: 2 cups.
  6. To make a yummy chip dip, combine 1 cup of sauce with 1/2 pound browned ground sirloin and simmer on low for 15 minutes.

Nice recipe!


I used this recipe to make some homemade green chile enchilada sauce and it worked great! The only alteration I made was to put the whole, almost-finished produce through a food processor for a few seconds, just to make the green chile more finely chopped and make everything look more smooth and green, like traditional sauce. It worked perfectly and it had great flavor. Thanks!

Alterations
