Frozen Eggnog Cups

- 1 30 oz. can of fruit cocktail (or 2 16.5 ounce cans) well drained shopping list
- 1/2 cup of maraschino cherries, quartered shopping list
- 2 3 ounce packages of softened cream cheese shopping list
- 1/8 tsp of salt shopping list
- 1/8 tsp of nutmeg shopping list
- 1 tsp of vanilla shopping list
- 1/8 cup of brandy shopping list
- 1 cup of commercially made egg nog shopping list
- 1 cup of whipping cream shopping list
- 2 cups of miniature marshmallows shopping list
- 2 to 3 drops of red food coloring shopping list
How to make it
- Drain the fruit cocktail. Drain and cut the cherries in quarters.
- Blend cream cheese with salt, nutmeg, extract, brandy and eggnog until smooth.
- Beat cream until stiff. Fold cream, marshmallows and drained fruit into the cream cheese mixture. Tint very lightly with the food coloring.
- Ladle into paper lined muffin cups. Freeze eight hours or overnight, covered tightly with plastic wrap or foil.

I like fruit cocktail and marshmallows, I remember momma making something with pistachio pudding and fruit cocktail that all of us would fight over at Thanksgiving. This sounds better than that.
