Over The Top Nachos Recipe

Easy to make nachos. Add as little or as much of your favorite stuff.

Ingredients
  • 1 pound ground beef
  • 1 (16 ounce) can refried beans
  • 1 onion, finely diced
  • 1 pkg. Tortilla chips
  • Salt & pepper to taste
  • 1 fresh jalapeno pepper, sliced
  • 2 cups shredded cheese

Directions
  1. In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. After the meat is thoroughly cooked, drain off the grease.
  2. Arrange the chips on a microwavable platter. Spread beans over the chips. Layer with ½ of the cheese, the ground beef mixture, and remaining cheese. Arrange jalapeno peppers on top.
  3. Microwave on medium-high until cheese has melted.
  4. Serve immediately with sour cream, guacamole, and salsa.

Love Nachos :)


I love Nachos. I cook carnitas and use the meat from that with refried beans, onion, Tostitos and jalapenos topped with nacho cheese and gaucamole and sour cream on the side. I purchase a large can of Nacho Cheese from Sams/Costo to use. It does not go to waste (unused cheese is stored in pack n save bags, sealed and frozen). Will post the Carnitas recipe another day.
