Chicken And Spinach Pasta With Creamy Red Sauce - Tried And True Estate Sale Recipe Recipe
This is another estate sale purchased classic that I have tried several times and never tire of it. It is incredible. Enjoy

Ingredients
  • 4 boneless skinless chicken breasts cut into bite size pieces
  • Olive oil
  • 2 handfuls fresh baby spinach
  • 2 cans stewed tomatoes
  • 8 ounce package cream cheese cut up
  • 2 cloves minced garlic
  • 1 teaspoon basil
  • 1/4 teaspoon freshly ground black pepper
  • 16 ounces bow tie pasta

Directions
  1. In a large deep frying pan brown chicken over medium high heat in a small amount of olive oil.
  2. Add garlic and let cook just until garlic begins to brown then add tomatoes, cream cheese, basil and pepper.
  3. Reduce heat to medium low and let simmer stirring occasionally.
  4. Start boiling the noodles and when almost done add spinach to water and continue cooking until pasta is done.
  5. When cream cheese has melted and sauce is creamy add pasta and spinach to pan and stir.
  6. Serve immediately.

Alterations


I would season my chicken with salt & lemon pepper, then I'd add a dash of red pepper sauce for a bit of a tang.. ( franks' red hot , the best).. & lemon juice to the cream sauce.. sounds absolutely yummy..
