Ingredients
  • 1 block extra firm tofu
  • 2.5 cups chicken flavoured veggie broth
  • 1 - 3 tbsp or to taste cajun seasoning mix
  • 1 tsp liquid smoke
  • hot sauce or chilli flakes to taste

Directions
  1. Prepare tofu (best if frozen, thawed, and pressed) by cutting into 8 slices.
  2. Mix remaining ingredients. Submerge tofu in marinade and cover.
  3. Marinade tofu anywhere from 30 minutes to a couple of days (shake container every now and then in case spices settle at the bottom. The longer that it is left in the marinade the better it will taste!
  4. Once done you may prepare tofu as desired. I prefer to pan fry until golden on both sides or broil 5-15 minutes brushing with marinade half way through.

What is "pressed"...just getting all the liquid off it???

Tofu doesn't spoil??? remember the golden rule...no such thing as a stupid question.

What about the broth..good for a couple days?

I can't help with the rest of your questions but you can press tofu by wrapping it in some paper towel and pressing it in between 2 plates for a while. You could put a heavy book on top to help squeeze water out. Press it in the fridge if you are worried about it spoiling. The tofu will take on more flavor if pressed.
