Blue Cheese Stuffed Potatoes

- 4 Baking potatoes; scrubbed well and dried shopping list
- ½ c sour cream shopping list
- 2 oz Gorgonzola; crumbled shopping list
- ¼ c milk shopping list
- ¼ c butter shopping list
- ¼ tsp salt shopping list
- ¼ tsp pepper shopping list
How to make it
- Preheat oven to 400F.
- Prick each potato deeply 4-5 times.
- Roast 45-50 minutes. Let cool 2 minutes.
- Cut a lengthwise strip, from the top of each potato and scoop out flesh, leaving a thin shell.
- Combine potato flesh, sour cream, cheese, milk, butter, salt and pepper. Stuff potatoes.
- Broil potatoes 3 minutes and serve.
