This is a very easy, yet very tasty potato dish. I obtained it several years ago from a church potluck and make it at least once a month. It is delightful.

Ingredients
  • 1 package scalloped potatoes
  • 16 ounces diced tomatoes
  • 1-1/2 cups water
  • 1/4 teaspoon oregano
  • 1/2 pound bulk pork sausage
  • 1 package shredded mozzarella cheese

Directions
  1. Heat oven to 400.
  2. Empty potato slices and packet of seasoned sauce mix into ungreased casserole dish.
  3. Heat tomatoes, water and oregano to boiling then stir into potatoes.
  4. Brown sausage and drain well.
  5. Arrange on top of potatoes and sprinkle with cheese.
  6. Bake uncovered for 35 minutes.
